A delicious soup, great for after a cold mornings play outside
Preheat oven to 350
Peel and cube the squash, onion, and carrot
Place with garlic in a non stick roasting pan and drizzle with oil and salt and pepper
Roast for 40 minutes or until all the ingredients have a nice caramelised colour
Place roasted veg into the blender and add about 1 cup of stock to start slowly adding more until desired sickness is attained.
Season according to taste.
Serve in a bowl topped with cheese, and a side of fresh bread rolls.
