Bring a taste of Italy to your Daycare with this delicious yet so simple fresh homemade pasta recipe.

Ingredients

1Lb Flour

Pinch of Salt

6 Large Eggs

Directions

Combine Flour and salt in a bowl.

Make a well in the centre of the flour and crack 6 eggs into the well.

Using 2 butter knives, cut the eggs into the flour, turning the bowl to ensure all flour and egg mixes well.

Kneed the dough for about 10 mins until it forms a smooth ball.

Cover with plastic wrap and refrigerate about 30 mins.

 

Take 3 inch balls of pasta dough and roll into sheet using a pasta rolling machine.  ( start at thickness 1 and work your way to level 5 for linguine)

Hang to dry about 20 mins before cooking.

 

Cook in boiling water (about 6 mins) with about 1 spoon of olive oil to help prevent pasta from sticking.

Top with your favourite sauce.

 

** you can freeze cooked pasta  - place individual portions in zip bags and freeze to enjoy at a later date.

when you are ready simply pace the frozen pasta in a bowl, cover with boiling water.  let stand for 5 mins, drain pasta will now be defrosted, add more boiling water to heat through.
